Using Up Leftovers

It's a frugal day on the farm. The leftover turkey carcass is boiling in a pot to make stock. Turkey soup for dinner tonight. It smells wonderful combined with the bread baking in the oven.


And leftover wood from the barn renovation project is getting installed as shelving for the cellar in the basement. The concrete knee walls were still there and plenty of canning jars were left behind, too. Only the shelves were missing. Now all I need is something to harvest.


Yes, I realize by building that many shelves I've probably cursed myself to blight and drought for years to come. But I'm hopeful, always hopeful.

What wonderful cellar storage you have created! I would look at it this way; you've done your part in faith, now God will provide the bounty so you can do more of your part. Here so many yummy things grow; we are often blessed with offers of free produce by Rick's clients, such as apple trees they aren't going to get around to harvesting or stuff like that. I'm willing to do the work, so we have wholesome canned goods on our shelves!

I have to admit the soup turned out fabulous.

I just put the carcass in a stock pot and filled with enough water to cover. Then added one onion cut up, a chopped up carrot, about 1/4 cup of dried parsley and about 2/3 cup of dehydrated celery (you could use fresh), 2 teaspoons of salt and about 1/4 teaspoon pepper. Bring it to a boil then turn it down to simmer for about 3-4 hours.

Then strain all the contents from the broth. Add back any chunks of meat along with a package of the frozen "soup mix" vegetables (or use whatever you have fresh) and 1/2 cup of barley. Heat over low for about 30 minutes.

Mmmm, mmm, good.

I have shelf and basement envy :-) Lots of room in the basement and attic when I was growing up for Mom and my grandmother to store canned stuff.

Now, no basement, tiny attic. I will figure something out, though.
